Being added to the list involves obligations, primarily to safeguard the practice and enforce a UNESCO treaty on protecting and promoting “intangible heritage”.

The recipe of this ancient and traditional pizza, we at Eatalians carry forward the way yet making it an unique recipe which is our house secret! To start a Neapolitan pizza the heat is the most crucial, it needs three principles: induction of the stalls, combustion of wood heat and the strength of the fire. This is the reason why we needed this oven straight from Italy to demonstrate the exact way it needs to be done.

Greatly thanks to the heat of the wood fire oven it does not remain white, because that sugar content in the flour gets caramelized by this powerful heat and gives that beautiful charred appertaining color to the pizza. The heat goes up more than 400 celsius, and transforms pizza in 90 seconds. 

Traditionally, the dough is fermented from 24-48 hours to fully raise and grow those little pizza baby in that gluten in flour to develop air and flavor In our own unique recipe, the blends of flour allows the dough to be very hydrated and digestible too so it doesn’t weigh your stomach down, our pizza will turn out crispy but soft and light!
